After multiple setbacks, Rochelle Hodge’s dream of opening a physical location for her gourmet baked potato business came true last week with her soft opening of Twice Baked. Now, this Friday, October 29th, she’s celebrating her official grand opening of the restaurant! 

“We’re so excited to be open finally, and we’re so incredibly thankful for everyone who showed up in support and who continue to support us every day and every step of the way,” Hodge said.

Twice Baked Perseveres in the Face of Adversity

Hodges originally started Twice Baked in 2016 as a mobile food service, first bringing her potatoes around to various hair salons in the valley before expanding into vending at events. 

Wanting to expand her business, she acquired the building for her restaurant in early 2020 and has faced obstacles every step of the way.

“We got the building right before COVID, so that prolonged our opening,” she explained. “Then we were delayed in terms of trucks of equipment and supplies getting to Vegas.”

After all of the setbacks, Twice Baked was finally getting ready to officially open its doors on June 15th of this year. But, unfortunately, yet another setback delayed them once more. 

“A car ran through the front door May 31st, 2021,” Hodge said. Thankfully no one was injured in the accident, which resulted from the driver experiencing a medical issue. 

While the insurance covered all of the damages, the continued delay of the restaurant added more strain on Twice Baked. Hodge said that they set up a GoFundMe for people to support them in the meantime and that the community showed up strong for them. 

“People donated to us because they love us,” she said gratefully.

Once the city said they could finally get the restaurant fixed, Hodge found out that the front windows would take four to five weeks to replace due to the monsoon season. Meaning once again, the Twice Baked grand opening was delayed.

“We’re strong, persistent, consistent, and persevering,” she said. “We’re not giving up because this is a fight.”

After all of these challenges, Hodge overcame everything life threw at her and finally realized her dream.
